Flourless Lemon Almond Cake

Another low carb diet recipe is that of the Flourless Lemon Almond cake. This recipe requires the following ingredients:

1 1/3 cups blanched slivered almonds 8 tablespoons of Splenda 4 large separated eggs 5 tablespoons of packed grated lemon peel ½ a teaspoon of ground cinnamon Salt to taste.

Method:-

Preheat the oven to 375 degrees Fahrenheit and use butter and flour to grease a cake pan (preferably which has a nine inch diameter and has 1 ½ inch high side). Line the bottom of the pan with waxed paper. Almonds should be finely ground and then add two tablespoons of sugar into the processor.

After this, take yolks in a separate bowl and add two tablespoons of sugar, lemon peel, cinnamon and salt. Beat this with an electric mixer for about two minutes, until the batter turns thick and then stir in almond mixture. Then, in a different bowl, beat the egg white till there are soft peaks. To this add four tablespoons of sugar and beat until it turns stiff, but not dry. Wallow and wrap these egg white balls in the almond mixture. Bake them for about half hour. For testing, a tester needle is poked into the baked balls, if it comes out clean and nothing clings to it. Ready is your low carb yummy diet-cake.
